- The Pioneer Woman's Pico de Gallo Salsa
5 roma tomatoes
1 onion
1 jalapeno pepper
1 bunch cilantro
lime juice
salt
(food processor if available)
Rinse cilantro with water and pull of leaves and set aside. Slice tomatoes and onion into small sections. Slice pepper into fine slices (use the plastic grocery sack to hold the pepper as you slice so the juices won’t burn your skin). Add (all but lime juice) to food processor and use until ingredients are finely chopped. Put chopped ingredients into a bowl and add lime juice and stir. Keep in the fridge.
